Red Fruit Cheesecake

What you need!

  • For the Cheesecake:
  • 32 ounces of cream cheese
  • 1 cup of sugar
  • 3 eggs
  • ¼ sour cream
  • 1 tablespoon of vanilla extract
  • 1 tablespoon of lemon zest
  • For the Crust:
  • Graham Crackers
  • 5 tablespoons of melted butter
  • 1 pinch of salt
  • ¼ cup of sugar
  • For the Sauce:
  • Strawberries
  • Blackberries
  • Blueberries
  • Raspberries
  • Lemon Juice

Let’s cook!

  • First Step
  • Preheat the oven to 325º
  • Second Step
  • Cheesecake mixture: 
  • Beat the cheese cream with the sugar until combined in a bowl using a hand mixer.
  • Add the eggs to the mixture and beat until combined.
  • Add the sour cream, the vanilla extract and the lemon zest until combined.

  • Crust Mixture:
  • Combine the graham cracker crumbs, the butter, the sugar and the salt until the mix will be completely moist and compacted. 
  • Fourth Step
  • Spray a springform pan with cooking spray and press the crust mixture into the pan walls until cover it all.
  • Fifth Step
  • Pour the cheesecake mixture over the crust mixture in the pan. 
  • Sixth Step
  • Bake the Cheesecake until it’ll be slightly jiggly in the center (More or less for 1h and 10min).
  • Seventh Step
  • Let the Cheesecake cool down for one hour in the oven.  
  • Eight Step
  • Refrigerate at least 4 hours.
  • Ninth Step
  • Make the glaze:
  • Mix in a saucepan (medium heat) the strawberries, the blackberries, the blueberries, the raspberries and the lemon juice. Whisk until the mixture is smooth.
  • Tenth Step
  • Pour the glaze over the cheesecake and top it with strawberries,blackberries, blueberries and raspberries.

Cookies & Cream Cheesecake

What you need!

  • For the Cheesecake:
  • 800 grams of cheese cream
  • ⅓ cup sugar
  • 1 tablespoon vanilla extract
  • 1 cup of warm milk
  • 1 tablespoon unflavored gelatin
  • For the Crust:
  • Chocolate sandwich cookies
  • 5 melted butter tablespoons

Let’s Cook!

  • First Step
  • Set aside ¼ of the cookies and separate the cream of the cookies from the other ¾ into two different bowls.
  • Second Step
  • Crush the ¾ of cookies.   
  • Third Step
  • Crust mixture: 
  • Combine the cookie crumbs with the melted butter and mix until the texture is compacted and completely moist.
  • Fourth Step
  • Spray a springform pan with cooking spray and press the crust mixture into the pan walls until cover it all.
  • Fifth Step
  • In a medium pot over low heat mix together the cream cheese, the sugar, the cookies cream and the vanilla extract until there are no lumps.
  • Sixth Step
  • Mix the milk and the unflavoured gelatin until dissolved.
  • Seventh Step
  • Pour the milk with the gelatine into the cream cheese mixture, stir constantly until it starts making slightly bubbles and remove the pot from heat.
  • Eight Step
  • Pour the mixture over the cookie crust.
  • Ninth Step
  • Decorate the top of the cheesecake with the saved cookies.
  • Tenth Step
  • Refrigerate for at least 4 hours.
