Hundreds of thousands of years ago our ancestors were the first ones who ate a crepe, although, they contained the simplest ingredients of flour and water which were combined to be cook over a hot stone. The crepe, as we know it nowadays, was eaten for its first time in Bretagne, France right after the crusades as this historical event, apart from its political importance, created different trade routes where the buckwheat began to be commercialized in Europe. Over time, the crepe recipe suddenly spread through Europe and the entire world where it began to evolve as it was mixed with different ingredients and served each time with new toppings.

The cheesecake is one of the most delicious and well-known dessert around the whole world! The first time a person taste it was a long long time ago in ancient Greece, most specifically in the island of Samos, where the cheesecake was eaten by the most important athletes of the century during the first Olympic games as well as Greek citizens in the biggest wedding parties of the decade. Over time, due to the conquer of Greece by the Romans, the recipe of this famous dessert was spread through all Europe and it was modified in some of these countries depending on its gastronomy. Subsequently, Europeans brought different cheesecake recipes to America and the entire world and it was until the 18th century where the cheesecake recipe, as we know it nowadays, took form in the United States.

No one knows who we should really thank for inventing this creamy delicious dessert! Although, rumors say that some well-known historical figures like Marco Polo, the Chinese King Tang of Shang, Alexander the great and Catherine de Medici among others, were the ones who had the first thoughts about the ice cream… the recipe evolve over the years and it was until the 17th century that the first Ice cream was served in a café in France. Even though the recipe was known worldwide, only few persons were able to eat it due to the need of keeping the ice cream at low temperatures, this is why it was only eaten in special occasions. It was in the 18th century when this delicious dessert had its boom as a result of the invention of the fridge, the creation of different flavours and the emergent ice cream factories. Since that moment, the recipe began to develop itself with new flavours, ingredients and presentations turning into the delicious ice cream we eat today!

Cinnamon Crepe

What you need!

  • Crepes Mixture:
  • 1 ½ cups of whole milk
  • 1 cup of flour 
  • 1 tablespoon of granulated sugar 
  • 1 teaspoon of salt 
  • 4 large eggs 
  • 4 tablespoons of melt unsalted butter
  • Cinnamon Sauce:
  • 4 tablespoons of unsalted butter
  • ½ cup of brown sugar 
  • 2 tablespoons dark rum 
  • ½ teaspoon of ground cinnamon
  • Crepe Filling:
  • 8 ounces of cream cheese
  • ¼ cup of heavy cream 
  • 2 tablespoons of powdered sugar
  • 1 teaspoon of vanilla extract 
  • 1 teaspoon of orange zest

Let’s cook!

  • First Step
  • Crepes:
  • Combine the milk, flour, granulated sugar, salt, eggs and butter in a blender and until it become smooth.
  • Let the batter rest at room temperature for at least 15 minutes and the in the refrigerator for at least 1 hour.
  • Second Step
  • Cinnamon Sauce: 
  • Melt the butter in a small saucepan over medium heat. Stir the brown sugar, the rum and the cinnamon. Stir until the sugar melts and add 2 tablespoons of water.  
  • Third Step
  • Filling:
  • Combine the cream cheese, the sour cream, the powdered sugar, the vanilla extract and the orange zest in a mixer until it becomes fluffy.
  • Fourth Step
  • Take a pan and heat it up to medium.
  • Fifth Step
  • Brush the pan with butter, add 4 tablespoons of the crepe mixture and cook it until it has a golden-brown color in both sides. 
  • Sixth Step
  • Place the crepe on a flat surface with the browner side down.
  • Seventh Step
  • Stir 4 tablespoons of filling.
  • Eight Step
  • Fold the crepe in half and roll it tightly.
  • Ninth Step
  • Spoon the sauce over the crepe, dust with powdered sugar and some orange zest on top.

Nutella Banana Crepe

  • Crepe mixture:
  • 1 ½ cups of whole milk
  • 1 cup of flour 
  • 1 tablespoon of granulated sugar 
  • 1 teaspoon of salt 
  • 4 large eggs 
  • 4 tablespoons of melt unsalted butter

  • 2 Nutella tablespoons
  • 1banana 

Let’s cook!

  • First Step
  • Crepe:

Milo Ice Cream

What you need!

  • Milo powder
  • 1 cup of whole milk
  • 2 cups of heavy cream 
  • ½ cup of sugar
  • â…› tablespoon of fine sea salt
  • 5 egg yolks
  • Vanilla extract
  • Ice cubes
  • Plastic Ziploc bags

Let’s Cook!

  • First Step
  • Mix the milo powder with the milk, the sugar, the salt and the vanilla extract in a pot and warm them up over medium heat until the sugar has completely dissolved. 
  • Second Step
  • Whisk the egg yolks and when obtain a homogeneous texture pour the milo mixture into the yolks without stop whisking constantly.
  • Third Step
  • Take a plastic bag and pour inside the heavy cream and the milo mixture, close the bag, gently blend and let it cools to room temperature.
  • Fourth Step
  • Take a bigger plastic bag and pour ice cubes inside, then the plastic bag with the milo mixture and more ice cubes on top. 
  • Fifth Step
  • Cover the plastic bag with a towel, start shaking it for at least five minutes and then take the ice cream out of the bag and mix it with a blender.
  • Sixth Step
  • Take out the milo mixture plastic bag and put it in the refrigerator for at least four hours. 
  • Seventh Step
  • Top the ice-cream with milo powder.

Stracciatella Ice Cream

What you need!

  • Vanilla extract
  • 2 cups of heavy cream
  • 1 cup of whole milk
  • 2 tablespoons of corn syrup
  • 5 egg yolks
  • ½ cup of sugar
  • â…› tablespoon of fine sea salt
  • 150 g of dark chocolate

Let’s cook!

  • First Step
  •  Pour the corn syrup, the heavy cream, the milk and the vanilla extract into a saucepan. Turn on the heat and let it all boil for about 2 minutes.
  • Second Step
  • Pour the sugar and egg yolks into a bowl and whisk it all into a fluffy mixture.
  • Third Step  
  • Pour slowly the boiled milk mixture into the bowl with the egg yolks while whisking constantly.
  • Fourth Step
  •  Pour it all back into the sauce pan and slowly heat it up while stirring all the time, add the fine salt and whisk until it dissolve completely. 
  • Fifth Step
  • Take a plastic bag and pour inside the mixture, close the bag and let it cool to room temperature.
  • Sixth Step
  • Take a bigger plastic bag and pour ice cubes inside, then the plastic bag with the mixture and more ice cubes on top. 
  • Seventh Step
  • Cover the plastic bag with a towel, start shaking it for at least five minutes and then take the ice cream out of the plastic bag and mix it with a blender.
  • Eight Step
  •  Take out the mixture plastic bag and put it in the refrigerator for at least four hours. 
  • Ninth Step
  • Melt the dark chocolate and pour it very slowly in the ice cream while stirring well. 
  • Tenth Step
  • Continue freezing the ice cream until it’s completely solid and top it with more melted chocolate on top.

  • 5 tablespoons of melted butter

  • For the Sauce:
  • Strawberries

  • First Step
  • Preheat the oven to 325º
  • Second Step
  • Cheesecake mixture: 
  • Beat the cheese cream with the sugar until combined in a bowl using a hand mixer.
  • Add the eggs to the mixture and beat until combined.
  • Add the sour cream, the vanilla extract and the lemon zest until combined.
  • Their Step
  • Crust Mixture:
  • Combine the graham cracker crumbs, the butter, the sugar and the salt until the mix will be completely moist and compacted. 
  • Fourth Step
  • Spray a springform pan with cooking spray and press the crust mixture into the pan walls until cover it all.
  • Fifth Step
  • Pour the cheesecake mixture over the crust mixture in the pan. 
  • Sixth Step
  • Bake the Cheesecake until it’ll be slightly jiggly in the center (More or less for 1h and 10min).

  • Let the Cheesecake cool down for one hour in the oven.

  • Refrigerate at least 4 hours.

  • Make the glaze:
  • Mix in a saucepan (medium heat) the strawberries, the blackberries, the blueberries, the raspberries and the lemon juice. Whisk until the mixture is smooth.

  • Pour the glaze over the cheesecake and top it with strawberries,blackberries, blueberries and raspberries.

  • 800 grams of cheese cream

  • 1 cup of warm milk

  • Pour the milk with the gelatine into the cream cheese mixture, stir constantly until it starts making slightly bubbles and remove the pot from heat.

  • Pour the mixture over the cookie crust.
  • Ninth Step
  • Decorate the top of the cheesecake with the saved cookies.
  • Tenth Step
  • Refrigerate for at least 4 hours.
